Now you know all the beef liver nutrition benefits. But, what if you don't like the taste? I personally struggle with this one. Mainly, I didn't grow up eating liver, and I'm a super-taster.   7. Wow I honestly find beef liver milder than chicken liver!

  8. I just dehydrated some thinly sliced liver in my dehydrator. OMG it is so yummy. it tastes like pate jerky. I came to find out how often I could eat them as a snack. I'm kinda sad it is suggested only weekly as I could eat this everyday. But What I should do is to weight the liver before I dry it, then weigh it after to figure out how much dry liver is equal to 4oz fresh liver. or just measure out 4oz fresh serving , slice and keep them separate in the dehydrator…

    I could only find calf/beef liver pre-sliced and frozen. So I took those slices and sliced them crosswise into slivers, and laid them onto parchment paper. I lightly sprinkled some powdered mushroom salt. I let this sit in my dehydrator at 158 degrees for a total of 10 hours, turning them over frequently. I ended up with crunchy, completely dried slivers of liver that taste like pate when I chew em.

    I've heard some people suggest blending a slurry and spreading it out like fruit leather but that sounds like more equipment to clean than just a cutting board and knife, but I'm sure that would work well if you are making a lot of it at once.

    1. I really appreciate your article about the benefits of liver. I grew up with a Glasgow-born Mom who served lots of peas, fish, and liver. The benefits of fish are well publicized in the U.S. but the outstanding nutrition in liver isn't. Folate is important, especially combined with B6 and B12. Those 3 nutrients together have kept many seniors out of nursing homes. Liver is one of the most nutrient-packed foods available – and very affordable. Your suggestions for cooking it and "disguising" it are wonderful.

  9. Are there concerns of getting too much vitamin A and copper by taking beef liver supplements everyday? Would you recommend perhaps not taking everyday to avoid getting to much of these vitamins and minerals?

    1. Please refer to the NIH's recommendations for vitamin A intake and as always, consult your doctor before starting any supplement routine.

  10. You can also make beef liver taste milder by soaking it in milk beforehand. The longer you soak, the less like liver it tastes. I would try soaking it 1-2 hours and see if that makes it tolerable.
